Malt, the Soul of Beer. Let’s dive deep into the Mercurial spirit of beer, as we brew on site at Admiral Maltings, using their amazing grains to craft rich and soulful brews.

Here in the Bay, we are lucky to have California’s first floor-malting, Admiral Maltings. They hand-craft some of the best malt available, using California-grown barley, heritage grains, and a mix of modern and traditional techniques.

You’ll get a behind the scenes tour of the malthouse, seeing every step of the malting process: from the steep tanks, to the germination floors, through the kiln and all the way into the bag. You’ll learn how the maltsters create highly functional, and richly flavored malts for your brews.

We’ll do a fun experiment, making our own mini-batches of malt! You’ll steep your own raw barley, taking it home with you to shepherd it through the rest of the malting process.

We’ll have an awesome tasting, drinking beer from the on-site pub, The Rake. The Rake pours beers from breweries across California, all made with Admiral Malt. You’ll pull inspiration from these brews, experiencing a vast array of flavor possibilities.

Then, with your newly acquired malt insight, you’ll get your hands dirty on one of our brewing rigs, brewing a malt-forward masterpiece. We’ll do the intermediate “brew-in-a-bag” method, pulling all our sugars and other nutrients, color, flavor, and aroma, right from the fresh malt of Admiral. You’ll work with a few partners to create a 5-gallon batch, leaning heavily into the rich flavors of the barley, crafted on the malt floor, just a few feet from our brew kettles. You’ll learn techniques you can take home and put to work on your own brews right away. About two weeks later, we’ll gather again to taste our brews, and bottle them up for you to take home. You’ll walk away with at least a 6-pack of big bomber bottles that YOU brewed!
